Karbouj Mad Walnuts

Be it Easter or Eid, holidays in the Middle East are incomplete without these sweets. Stuffed with chopped walnuts or chopped pistachios. These buttery sweets are the perfect reward after a month of fasting during Ramadan and Eid.

Karbouj Mad Walnuts is made with semolina, then pressed to have two layers of it. Then traditionally filled with Walnuts or Pistachios.

However, Every baker has his secret for making the best Karbouj Mad. “the secret is a great recipe. Rafaat Hallab which is located in Tripoli, Lebanon makes it with a delicate balance between the ingredients. As a mater of fact we get a weet that melts in your mouth. As a matter of fact, using high quality Walnuts or Pistachios is a must because they are really the star of the show in Karbouj Mad with Natef.”

Traditionally home-made Karbouj Mad, after being flattened with the fillings between the two layers of Semolina. Then the Natef is placed on top.
